We create living space!
In the summer months, we spend a lot of time creating grazing areas and habitats for game. We create our own meadows for red deer and roe deer in the middle of the forest, we plant game fields, and we grass, fertilize and mow embankments of forest roads. The forest floor is cleared of branches so that the capercaillie can pursue its courtship display undisturbed. Hundreds of kilos of salt stones are carried out for the wild animals. All this is done to create a habitat and a healthy food supply for the game.
Winter in the mountains is a time of emergency for the game.
When there is a lot of snow, life in the mountains is very harsh. To prevent animals from starving to death and causing damage to the forest, we operate 5 deer feeders and a large red deer feeder, all in the wild without a fence.
During the winter months, the red deer feeding area is visited by around 100 red deer every day. Despite the red deer's reduced metabolism, these 100 animals eat 40 tons of hay, 80 bales of silage and 45 tons of brewer's grains over the winter. Without this feeding, the survival of a large proportion of the deer would not be possible. This feeding is the great task of Franz Sr. and for over 20 years he has set out at least every other day to feed the deer. 7 km of forest road have to be kept free of snow, hay racks and troughs have to be filled.
In order to manage the game population sustainably, animals must of course also be shot. Exactly the right number so that the population of a species always remains the same size. The result is one of the highest quality foods there is - venison. Our trusted master butcher - Fleischerei Schader in Tamsweg - conjures up a wide variety of sausage products for our breakfast buffet. The finest cuts are available in our restaurant herzenslust. Just try it, you will be delighted.
More regional and organic is not possible.
